Healthy Quinoa Salad
This delicious, and simple to make, quinoa salad should serve a family of four!
Ingredients:
1 pkt of ready cooked quinoa (I used Merchant Gourmet red and white)
1/2 tin of cooked chickpeas (rinsed)
1/2 sml red onion (finely chopped
1/4 cucumber (finely chopped)
sml container of pomegranate seeds
Dressing:
50 ml of extra virgin olive oil
1/2 juice of a lemon
1 1/2 tsp of apple cider vinegar
1 garlic clove crushed and finely chopped
Method:
Combine all ingredients for the quinoa salad and then mix together all the ingredients for the dressing.
Pour the dressing over the salad and mix - can be made in a matter of minutes and will keep overnight in the fridge. If you are storing it in the fridge it’s best to add the dressing after as the oil solidifies slightly in the fridge.
